  • 소개 및 적용: Citric acid is a weak organic acid found in most plants and many animals, and is known for its astringent and antioxidant properties. It is used as a product stabilizer, pH adjuster, and preservative with low sensitizing potential. Derived from citrus fruits, citric acid is produced by mold fermentation of sugar solutions and extraction from lemon, lime, and pineapple residues. It is used in various food products such as fruit drinks, carbonated beverages, cheese, and jellies, as well as an antioxidant in instant potatoes, wheat chips, and potato sticks. The acid helps prevent spoilage by trapping metal ions and prevents discoloration in fresh frozen fruits. Citric acid has been studied since ancient times, with its discovery credited to Jabir ibn Hayyan and its first isolation by Carl Wilhelm Scheele. It appears as colorless, odorless crystals and contains three carboxyl groups, resulting in the citrate ion when hydrogen ions are lost. The acid also forms salts and esters, such as calcium citrate and trimethyl citrate.
