• 소개 및 적용: Fructooligosaccharide (FOS) is a natural sugar found in various vegetables and obtained from inulin or synthesized from sucrose. It acts as a prebiotic to promote the growth of beneficial bacteria in the gut and has properties of soluble fiber, sweetener, and calcium absorption enhancer. When combined with artificial sweeteners, it improves taste and texture in food products, reduces stickiness in soy protein bars, binds water, and increases the shelf life of baked goods. FOS is also known as oligofructose.
